Sweet Potato Brownie
IGREDIENTS
1 cup pureed sweet potato
1 cup plain flour
1 egg
1/4 tsp baking powder
1/4 cup honey
4 heaped tbsp cacao powder
4 tbsp butter
1/4 cup choc chips (optional)
METHOD

Preheat oven 180 deg (160 fan forced)

Grease an oven proof 20cm baking tray

Melt butter in a microwave.

Combine butter with cacao

Meanwhile combine sweet potato, flour, honey, baking powder, egg

Combine with butter mixture
-
Add the choc chips
-
Pour mixture into baking tray
-
Place in oven and bake for 25-30 mins

Remove from tray onto a wire rack

Once cool, cut and serve
