Easy Quick Chicken Soup
For the last few weeks i have worked so much my immune system has dropped. I found myself with a sore throat today. I mean i know i work in the medical field but hardly do i get a cold.
So I made a quick chicken soup
INGREDIENTS
1 Brown onion diced
1 tbsp olive oil
1 cup fresh or frozen peas
1-2 red eye chillies
2 carrots sliced
1 cup rice noodles prepared to packet instructions
4 cups chicken stock
Salt and pepper to taste
2 cups steamed chicken breast
METHOD
Heat oil on a sauce pan
Add onions and sauté until translucent
Add carrots and chilli and cook for 2 minutes
Add the stock and cover the pot let it simmer for 5 minutes
Add rice noodles, chicken and peas
Serve and enjoy
